I am using the Bakery App as a template for my own Sourdough Bakery and would like to use a payment gateway called Yoco instead of Stripe.
Is there any way this could be done in Anvil, or is Stripe the only payment gateway that integratrates with Anvil?

Stripe is the only provider for which Anvil have done the integration for you and made it available as a built-in service.
However, there is nothing to stop you integrating any other provider yourself. It’s just a little more work!
I haven’t followed you doc links but, typically, you might end up using HTTP requests to make calls to their API from your sever code and including their javascript library within your client code.
